Just months after being named one of the best pizza places in the U.S., LA’s Pizzeria Say (our personal pick for the best pizza place in the city) ranks in a similar global ranking I went in. world.
In this more expansive ranking, Tokyo’s first Tokyo-Style Pizza Omakase Pizza comes in at No. 33 (compared to No. 8 on the U.S.-only list).
“Since opening in 2022, Pizzeria Sei continues to impress with its unique Tokyo-Neapolitan style pizza,” the official study reads. “The atmosphere inside the restaurant is quiet and peaceful, and the pizza chefs knead the dough, giving it the chewy and crispy texture of whipped crack.”
The restaurant also gives credit to the dough prepared by chef William Zhu, who co-owns the restaurant with his wife, Jennifer Soh, and is particularly committed to the constant evolution of ingredients.
“Today’s pizza is flavorful in every sense of the word, especially thanks to ‘salt punch,’ a Tokyo technique in which chefs place a handful of salt in the oven and place the raw dough on top,” the study says. The book reports.
Also worth noting is Parlor’s omakase pizza option. It offers bi-weekly 8-10 course tasting menus featuring different dough styles and flavors.
